Ingredients
- 6-8 ripe tomatoes
- 1 onion, sliced
- 3 cloves of garlic, minced
- 4 cups of chicken or vegetable broth

Instructions
- Heat olive oil in a deep pot over medium heat. Add the sliced onion and sauté until soft, about 5 minutes.

- While the onion and garlic are sautéing, make cuts on the top of each tomato and place them in boiling water for 30 seconds. Then transfer the tomatoes to a bowl of cold water and peel off the skin. Dice the tomatoes.
- Add the diced tomatoes to the pot with onion and garlic, sauté them together for another 5 minutes until the tomatoes become soft and start to release juice.
- Add the chicken or vegetable broth to the pot and bring the soup to a boil. Then reduce heat and let the soup simmer on low heat for about 15-20 minutes.
- Add chopped basil and mozzarella to the soup and cook for another 5 minutes until the mozzarella starts to melt.
- Serve the tomato soup with basil and mozzarella hot. Season with salt and pepper to taste before serving.
