Khachapuri with Cheese Recipe:

Khachapuri with Cheese is a fragrant and hearty Georgian delicacy that will forever be remembered for its unique taste and tender texture. These breads, crispy on the outside and soft on the inside, are filled with a rich combination of Adyghe and suluguni cheese, which melts during baking, creating a masterpiece of cheesy fondue inside. When you taste khachapuri, you will embark on an exciting culinary journey to the heart of Georgia, where every bite of this dish is infused with eastern aromas and traditions of Caucasian cuisine.

Ingredients:

  • 2 cups flour
  • 1 teaspoon salt
  • 1 cup water
  • 10 g yeast
  • 200 g Adyghe cheese
  • 200 g suluguni
  • 1 egg
  • 30 g butter

Cooking Steps:

  1. In a large bowl, mix the flour with salt. Dissolve the yeast in warm water and add to the flour. Knead a soft dough and let it rise under a cover for 30 minutes.
  2. Preheat the oven to 200 degrees Celsius. Grate the Adyghe and suluguni cheese on a coarse grater.
  3. Divide the dough into two parts and roll each into a round shape. On half of the circle, place the cheese mixture, leaving a small space around the edges.
  4. Fold the dough circle in half, press the edges tightly, and seal them to form a boat shape. Brush the top of the khachapuri with beaten egg.
  5. Bake the khachapuri in the oven for about 20-25 minutes until golden brown.
  6. After baking, brush the top of the khachapuri with butter. Serve hot, sliced into portions.

Recommendations and Tips:

  • If you don't have Adyghe cheese, you can use only suluguni or substitute it with another soft cheese.
  • To make the khachapuri more filling, you can add onions or herbs to the filling according to your taste.
  • When making the dough, make sure the water is not too hot to avoid killing the yeast.
  • If you prefer a crispier crust, you can increase the oven temperature at the beginning of baking.
  • Khachapuri pairs well with tomato sauce or a vegetable salad.
